This delicious soft and creamy white bread has half a cup of coconut flour added to 3 cups of bread flour.  It has a tight crumb and a hint of coconut flavor.  Very yummy and healthy too.

Whole Durum Sandwich Loaf

yellow-toned soft and yummy sandwich bread with 50% whole durum flour

delicious toasted with just butter or jam

Recipe here. Substitute very fine stone-ground whole durum flour for half of the flour. The buttery flavored bread has tight soft crumb.

Stollen

I followed this method to shape 2 loaves and they look closer to the German Stollen we regularly buy every Christmas season.

I found a website for Dresdner Stollen that suggests to form the dough into a loaf and make a 1/3-inch deep slash right down the middle. I find this easier and the Stollen doesn’t look bad at all.
